
These cookies came out good. So good that I took a bunch of pretty pictures on my favorite thrifted plate and then wrote up the recipe. I even wrapped some up in a cute striped napkin to give to the construction guys in my driveway. I think they would be exceptional with some cold chocolate milk or a hoppy beer (the cookies...though some of the guys are pretty cute...)
72 almond butter & habanero jam cookies
1 cup butter, softened
1 and 1/4 cups organic roasted almond butter
1/2 cup brown sugar, packed
3/4 cup white sugar
2 eggs
1/4 teaspoon almond extract
1 teaspoon baking soda
1 teaspoon baking powder
2 and 1/4 cups unbleached flour
3 tablespoons prepared habanero pepper jelly or other red pepper jellyCream together in a mixer the butter, almond butter, and two sugars. Beat in the eggs and almond extract.
In a separate bowl, mix the soda, powder, and flour. Add to the almond butter mixture and combine thoroughly.
Drop rounded teaspoonfuls onto an ungreased cookie sheet (I line mine with foil). Using a 1/8 teaspoon, make a slight depression in the top of each cookie (not too deep or this will happen). Fill each depression with 1/8 teaspoon of pepper jelly. Bake for 10-12 minutes, or until the edges are slightly brown. Let sit on the cookie sheet for a minute or two before moving to a plate to cool.
Now that they're done, I can sit back and work on book knitting. It's a slow, baking and knitting kind of day, because I'm extra exhausted. Last night Binx had his first toddler-style vomit blowout. Seven times in one night. He was so scared and disgusted, and I was so worried and heartbroken that I couldn't do anything for him. I held him all night, and he kicked me in the face for hours but we all finally got a tiny bit of sleep. Not enough.
But we're trying to be happy today. We're focusing on pretty things. Binx on trucks and canning jar rings, me on koigu.

I took it easy and made chocolate spice cookies today myself. Sorry to hear the little one wasn't well, but it sounds like he's back to being himself already!

Thanks for the recipe; those cookies sound fantastic. By the way, everytime we go somewhere wearing our meathead, we get so many compliments (and requests for gifts!). Love the pattern; hurry up with the book!!

Oh, my heart goes out to you and Binx. I remember one night when both my kids had "It" and all three of us spent the night in the bathroom -- my daughter on a dog bed in the bathtub, my son on a crib mattress jammed next to the shower, and me in a chair, trying to sleep between "episodes."
I hope Binx's tummy is all better now. (and that you don't get it next)
